Synopsis
Pengetahuan Bahan Hasil Perkebunan dan Teknologi Pascapanen memegang peranan penting dalam menjamin mutu suatu produk. Dengan memahami karakteristik biologi, fisiologis maupun kimia hasil panenan khususnya bidang perkebunan, serta cara penanganan yang baik (Good Handling Practices) akan memberikan hasil produk akhir yang bermutu dan memenuhi persyaratan mutu SNI. Hasil panenan komoditas perkebunan mempunyai karakteristik yang spesifik, sehingga penanganannya dilakukan sesuai dengan masing-masing komoditas hasil perkebunan. Buku ini membahas pengetahuan bahan hasil perkebunan dan teknologi pascapanen dengan cakupan karakterisik bahan hasil perkebunan, pentingnya penanganan pascapanen, perubahan kandungan dalam hasil panenan, pembentukan dan peranan etilena, penanganan pascapanen komoditas kelapa sawit, penanganan pascapanen komoditas kopi kakao, penanganan pascapanen komoditas karet, dan penanganan pascapanen komoditas kelapa dan lada.
